This is a great energy bar that we can make when camping. No eggs or flour but chock full of good fat and protein. You could run for hours off one of these babies. (Approx 8g fat, 4g protein, 16g carbohydrates per slice)
- 395g can sweetened condensed milk
- 100g butter, chopped
- 3 cups toasted muesli - one with a nice mix of fruits and nuts
- 1/2 cup linseed meal
- 1 cup shredded coconut
- 1 cup protein powder
- Sprinkle of chia seeds on top
- Grease a 3cm-deep, A4 sized baking tray.
- Combine condensed milk and butter in a saucepan over medium heat. Cook, stirring, for 4 to 5 minutes or until smooth.
- Stir in muesli, linseed meal, coconut and protein powder (add this last as it sucks up all the moisture). Bring your muscles to the mixing.
- Press mixture into prepared pan - smoosh it in with a hot spoon. Smooth top. Sprinkle with chia seeds. Cover. Refrigerate overnight or until set.
- Cut into 30-odd pieces. Eat. Run.
